Results much?

Losing weight is supposed to make you feel good right? Well, it does, but when losing weight where I need the extra 'bounce' (yes, the girls) it gets frustrating. I feel dis-proportioned. I have lost 5 pounds, but none of it from my problem areas. Being a woman, you can never win.

I would like to share a recipe I made this week. I found it on a paleo website and it turned out fabulous.

Coconut Chicken

*This recipe calls for chicken thighs, but I'm not a fan of dark meat so I used chicken breasts.

  •  2 chicken breasts cut in strips
  • shredded coconut
  • almond flour
  • coconut oil
  • 1 egg
  • cup of almond/coconut milk
  • salt and pepper to taste ( I added a small pinch of ginger as well! SO GOOD)
Mix egg and almond milk. In a separate bowl mix almond flour, coconut and seasonings. Dip chicken into egg and milk mixture, then into the coconut mixture. Place in well oiled (coconut oil) skillet on medium and cook until meat is done. ENJOY! I made sweet potatoes as a side and it was perfect!

Struggling with my Jiggling

So I have been off and on with this Paleo stuff for the past 3 weeks. I am having trouble with it at this point, so to help with balancing my horrid cravings for all things sugar, I have calculated my Weight Watchers points. I am going to try to stay within these points and eat as many Paleo meals as possible. This will allow me to still have some sugar now and then. I have found, with this diet, that I am having less stomach issues. I may or may not have a gluten problem? My weight has fluctuated so much this month that I haven't even kept track of where I started. I did weigh myself this morning and I must say that I thought I weighed more! At this point, it's time to get my jiggly self in shape and healthy. I have been working out only twice a week due to the frigid winter and little free time. Hoping to start running as soon as it warms up.

I have made a list of meals for the next two weeks and will be sharing some. I'm hoping they turn out and hoping my boyfriend doesn't notice that they are all "healthy meals".

Organization, Organization, Organization....

I will be the first to admit that I am not an organized person. In fact, I'm pretty lazy and probably the biggest procrastinator you will ever meet. I do, however, feel that organization will be the key to my weight loss and getting ahead in life in general. Starting today, I'm planning my weekly meals, weight loss goals, workout routines etc.. It is a daunting task, but it is time for me to grow up, quit being the lazy girl I am and get organized! I'm creating an area to post everything so it will be in front of me. (Hoping this helps) Tips are welcomed! I'm not real good at this growing up thing!

This weekend I'm going to prepare meals for the entire week! I have found some pretty amazing recipes to try and will share with you how they turn out!

Hello 2014!

Hello 2014! Like everyone else, I'm planning on achieving a few personal goals this year. I've lost 10.3 lbs (gained about 2 lbs over the holidays) on this Paleo diet thing. Although this diet has been really good for me, I find it really hard to plan the meals around my work schedule. I have decided to continue eating some of the meals of the Paleo diet, but not be a full "Paleo" nut. I will be keeping track of my calories, and try to workout 4 times or more a week. I would love to get in shape enough to run a marathon at my favorite place, DISNEY WORLD! I'm going to start running as soon as Jack Frost decides to leave. I would also like to work on my depression. It does get really tough, but I am going to try to write down things to do throughout the week to keep me motivated and give me less downtime.

RESOLUTIONS:
  • Lose 40lbs
  • Get a hobby
  • Find a Full Time job
  • Start a savings fund for a Car, House and Vacation!
  • Learn to play the piano
  • too many more to name...
